Food Service Rotation
Carle Foundation Hospital (10 weeks)
- Over 400 hours of supervised practice in the food service dietetics setting
- Experience in diet office serving as a diet technician receiving patient orders and assuring diet adherence
- Assisted in all areas of hospital food service operation: patient services, tray line assembly, retail, safety/sanitation, procurement and planning, catering
- Served lunch to 200+ customers in the cafeteria
- Conducted food safety and sanitation audits on all 5 of the food service operations within Carle Hospital Main Campus
- Developed an in-service training regarding the dysphagia 2 diet (specifically tray assembly accuracy)
- Assisted with a lunch-and-learn catering event for nursing staff
- Developed and executed a themed meal: A Taste of the Tropics which was featured on the cafeteria menu on July 11th
